{ gluten free } Pumpkin Pie

Ingredients for the crust:
1 ¼ cup almond flour
¼ cup coconut oil {melted}
Pinch of salt
Ingredients for the pie:
1 15 ounce can pure pumpkin
¾ cup unsweetened almond milk
½ cup maple syrup
3 eggs
2 teaspoons pumpkin pie spice
¼ teaspoon salt
 Ingredients for the coconut whipped cream:
1 13.5 oz can coconut milk {refrigerated overnight}
1 tsp pure maple syrup

  1. Preheat oven to 325 degrees.
  2. Mix crust ingredients until dough forms. Press into pie plate and bake for 10 minutes. Set aside to cool.
  3. Add filling ingredients to blender {or mix in a bowl until well combined} and process until smooth. Pour into crust and bake for 1 hour, or until filling is just set.
  4. Cool completely and refrigerate 2 hours.
  5. While the pie is cooling, remove coconut milk from the fridge. Flip over. Open can and pour out the coconut water. Scoop coconut cream into a bowl.
  6. Add maple syrup.
  7. Using a stand mixer or hand beaters, whip the coconut cream on medium-high for about 3 minutes until soft peaks form.
  8. Top cooled pumpkin pie with the coconut whip when you’re ready to serve or store in a container in the fridge for a few days.

Autumn Salad Bowl + Honey Ginger Dressing

Makes 4 servings

  • 2 cups cooked quinoa (I used organic tri-colored)
  • 6 cups organic baby spinach
  • 1/4 cup raw pecans
  • 1/4 cup crumbled feta cheese
  • 1 ripe avocado, sliced
  • 1.5 crisp red apples, sliced
  • 1/4 cup dried apricots

Homemade Honey Ginger Dressing:

  • juice from two fresh lemons
  • 2 Tbsps raw honey
  • 1 Tbsp minced fresh ginger
  • 2 tsp minced fresh garlic
  • 4 Tbsps extra virgin olive oil, or avocado oil
  • sea salt and pepper to your taste


  1. In a large bowl combine spinach, quinoa, apple, dried apricots and then gently add the avocado.
  2. To make the dressing: In a small bowl whisk together all dressing ingredients very well.
  3. Drizzle dressing on the salad before serving and gently toss to combine.
  4. Top with pecans and crumbled feta cheese.

Slow Cooker Apple Pie Oatmeal

2 cups steel cut oats ( I used gluten free)
3 cups almond or coconut milk
3 crisp apples, cored and diced
1 1/2 Tbsp coconut oil
1 tsp ground cinnamon
1 Tbsp vanilla
1 star anise

 Optional Toppings:

  • raw honey or maple syrup
  • all natural apple puree
  • chopped nuts such as almonds, walnuts, pecans, etc.
  • fresh chopped apples

Healthy Slow Cooker Apple Pie OatmealInstructions: 

  1. Add all ingredients to the slow cooker (besides toppings…they go on right before serving!) – oats, milk, apples, coconut oil, cinnamon and anise star.
  2. Stir to combine well.
  3. Cook on low for about 3-4 hours depending on your cooker. 
  4. Serve warm and add toppings of your choice.

Corn-Fritter Poppers with Avo-Ranch Sauce {rachel ray}

One night laying in bed and can't sleep--ANXIETY SUCK! I know I can't be the only one who suffer's but when I am I try to get my mind off like watching something I enjoy or keeping busy with my Rodan + Fields business.

Last week I was watching RR and this recipe was on! I was so excited to try it over a weekend of not doing anything but relaxing and having nothing to do! FIRST weekend of NOTHING in about 5 weeks. I was glorious!

 I changed up this recipe a bit so it's more of a clean eating and healthy.

4 slices of turkey bacon
1 avocado, halved and pitted
2 limes, 1 zested (about 1 teaspoon) and both halved
1 cup plain Greek yogurt 
2 to 3 tablespoons pickled jalapeño brine plus 3 tablespoons chopped pickled jalapeños ( i skipped this part because I didn't want them spicy for the girls)
1/4 cup mixed finely chopped fresh chives and cilantro or parsley and dill
4 ears corn, husked
3/4 cup almond flour (to make gluten free)
1 teaspoon baking powder
2 eggs, beaten
1 cup shredded yellow cheddar, loosely packed (i used almond milk cheese) 
6 tablespoons cream cheese, cut into pieces, at room temperature (i used kite hill almond milk cream cheese for a dairy free version)
3 to 4 scallions, finely chopped, white and light-green parts only
1/4 cup (a small handful) fresh cilantro or flat-leaf parsley, finely chopped
2 large jalapeños, seeded and finely chopped (skipped this part too)
2 cloves garlic, chopped
About 1 teaspoon (1/3 palmful) each ground coriander, ground cumin and smoked paprika
Salt and pepper
About 1/4 cup Olive Oil for frying

In a large skillet, heat a drizzle of oil over medium high. Add the bacon and cook until crispy, stirring often, about 6 minutes. Transfer to a paper towel and let cool. Save skillet and its drippings.

Scoop the flesh from 1 avocado into a food processor and add the juice of a half lime (about 1 tablespoon). Slice the remaining avocado and douse with the juice of another half lime. Set aside.

Add the yogurt, jalapeño brine and a little salt to the processor with the avocado; process the sauce until smooth. Transfer to a bowl; stir in the chopped pickled jalapeños and the herbs.

Invert a small bowl inside a large bowl. Place 1 ear of corn upright on top of the small bowl. Cut the kernels off the cob (they’ll fall into the big bowl); repeat with the remaining ears of corn. Remove the small bowl, add the flour and baking powder to the kernels and toss to coat. Stir in the eggs, cheddar, cream cheese, scallions, cilantro, chopped jalapeños, garlic, spices, lime zest and reserved bacon. Season the batter with salt and pepper.

Form batter into twelve fritters, each about 2 1/2-inches in diameter. Add enough oil to the reserved drippings in the skillet to just cover the bottom, about 1/4 cup. When it begins to ripple, add 6 fritters to the skillet. Fry until golden brown and cooked through, about 3 minutes per side. Transfer cooked fritters to a rack set inside a rimmed baking sheet or to a paper towel-lined plate to drain. Repeat with the remaining fritters. Douse each batch with the juice from a lime half (1 tablespoon for each batch).

Serve fritters on a platter with Avo-Ranch Sauce alongside for dipping.

14cupdry white wine   (like pinot grigio)
14cuplow-sodium organic chicken broth  
1Tbsp.fresh lemon juice  
1tsp.finely grated lemon peel lemon zest  
1tsp.finely chopped fresh thyme (or ½  
4(4-oz. each) raw chicken breasts  
Sea salt  
ground black pepper to taste;

2lbs.asparagus   approx. 40 medium stalks
4tsp.unsalted organic grass-fed  
butter   cold

Preheat oven to 400º F.

Combine garlic, wine, broth, lemon juice, lemon peel, and thyme in an 8 x 8-inch pan; mix well. Set aside.

Season both sides of chicken with a pinch of salt and a pinch of pepper, if desired.
Place chicken on top of garlic mixture. Top each chicken breast with 1
slice lemon.

Bake for 20 to 25 minutes, or until chicken is no longer pink in
the middle.

10 minutes before chicken is done baking, lightly coat asparagus with
spray. Season with a pinch of salt and a pinch of pepper, if desired.

Heat large skillet over medium-high heat. Add asparagus; cook, turning
occasionally, for 5 to 7 minutes, or until tender-crisp and lightly charred.

Remove chicken from oven, discard lemon slices. Place chicken and
asparagus on a serving platter. Cover with foil; set aside while you finish
the sauce.

Pour pan juices into small skillet. Bring to a boil over medium-high heat;
cook, stirring occasionally, for 4 to 6 minutes, or until juices reduce
by half.

Reduce heat to low. Bring juices to just below a gentle boil. Add butter,
tsp. at a time; cook, whisking constantly, for 2 to 3 minutes, or until all
butter is melted and emulsified into a creamy sauce. Remove from heat.
Pour sauce over chicken and asparagus.

Place 1 chicken breast and 10 stalks asparagus onto each of four plates,
and enjoy!

• To trim ends of asparagus, hold one stalk of asparagus by each end and
flex until it snaps. Cut remaining stalks to length of broken stalk.
• If your emulsion breaks while making your sauce, simply whisk in a
splash of water to re-emulsify.
• If sauce looks thin and watery after all butter is melted, turn heat to
medium and reduce until creamy.
• Refrigerate leftovers in an airtight container for up to 4 to 5 days.
