Paleo Chocolate Lava Cake

As I near the end of my pregnancy I have become more addicted to chocolate. I am dairy free now so trying to find yummy new recipes.
A friend of mine posted this, and I was reading through the ingredients and was shocked I had everything to make it. Put the little one to sleep and straight to the kitchen I went to make this bad boy! I figured I would experiment with the recipe so this is why I didn't take any fancy step by step pictures and the one below is the one you get!

It was DELISH and you must try!!

Orginal recipe was from Healthy Holistic Living, but I changed up a few things..

Serves 2

Prep Time: 15 minutes

Cook Time: 12 minutes

Ingredients:

  • 2 eggs
  • 2T cocoa Powder
  • 3T coconut oil 
  • 2T creamy almond butter
  • 1/2t vanilla extract
  • 1T maple syrup
  • 1T almond meal
  • 1/2 cup dark dairy free chocolate chips

1. Preheat Oven to 400 degrees, coat 2 mugs with a little bit of coconut oil and 1tbs of the cocoa powder. 
2. Melt Chocolate Chips and coconut oil in the microwave in 30 second increments and stir until smooth.
3. In a separate bowl, combine eggs, almond butter, maple syrup and vanilla extract. Mix using a hand mixer for 4 minutes, mixture should be fluffy.
4. Pour melted chocolate into egg mixture, stir as you pour. 
5. Gently stir in almond meal and 1tbsp of cocoa powder. 
6. Divide batter in 2 mugs
7. Bake for 10-12 minutes and once you remove from oven let cool for 3-4 minutes. Gently slide a knife around the edges to break loose and flip upside down on a plate.
