Clean Eating Meatloaf




Growing up I was never a huge fan of meatloaf but the older I get...the more I love it. It is an easy dinner that everyone loves! It took no time for me to whip this up and put in the oven! My whole family devoured it! Makes great leftovers too...if you have any left!
  • 1 lb. extra lean ground beef or turkey
  • 1 small onion (chopped)
  • 1 small organic green pepper (chopped)
  • 1 large handful of organic spinach chopped
  • 1 organic egg
  • 1 slice of Ezekiel bread (made into breadcrumbs with food processor)
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. salt
  • 1 tsp. pepper

Pre-heat oven to 350 degrees.

Combine all ingredients, except for the topping ingredients, in a large bowl and mix just enough to combine thoroughly.  Place in a loaf pan that is sprayed with olive oil spray. Mix toppings in a small bowl and spread on top of the meatloaf. 

Bake for 50 minutes. Remove from oven and allow to sit for 5 minutes before cutting.
