Hummus Chicken Power Bowl {Panera copy cat}


I don't know about you, but we are HUGE Panera fans! My daughter loves the mac & cheese! A year or  so ago my hubby came across a hidden menu for them and they had the hummus bowl! The workers would look at me like I was crazy when ordering this and when I would say it was on the hidden menu!  One day I decided HEY, I can make this own my own! So here's the recipe below! Not to mention this is GLUTEN FREE too! 






INGREDIENTS
  • 6 Cups Spinach leaves
  • 1 Large tomato, sliced and diced
  • ½ a Large cucumber, sliced
  • ½ a Small red onion, sliced
  • 2 Chicken breasts
  • Jalapeno Lime Hummus [recipe here]
  • 1/2 lemon
  • Cilantro for top

INSTRUCTIONS
  1. Preheat your oven to 350 degrees and spray a small baking sheet with cooking spray.
  2. Cut any visible fat off your chicken breasts and bake until no longer pink inside, 20-25 minutes.
  3. In a large bowl, mix together the spinach, sliced tomato, sliced cucumber and sliced red onion. Divide between 2 bowls.
  4. Top each salad with a sliced chicken breast and as much Hummus as your heart desires.
