Cinnamon Apple Quinoa Parfait

OMG!!!! This is Ah-mazing little healthy dessert!! A dessert that won't ruin your diet or your fitness goals!! Yes Please!! This. Is. Everything. 

Ingredients: 
1 cup oats
1 1/2 Tbsp coconut oil - melted
1 tbsp + 2 tsp Truvia - divided
3 1/2 tsp cinnamon - divided
4 apples - peeled and chopped
1 tsp vanilla
1 cup water - more if needed
2 cups Greek yogurt (plain nonfat large container)
1 cup quinoa - uncooked 
Directions: 
Preheat oven to 350. Combine oats, coconut oil, 2 tsp of Truvia and 1 tsp of cinnamon in a small bowl. Evenly spread on a baking sheet and bake until golden brown, about 7-10 minutes. Set aside to cool. Meanwhile, in a medium saucepan over medium heat, combine apples, 1 tsp cinnamon and Truvia vanilla, and water, mixing well. Bring to a boil and reduce heat to low. Partially cover and cook until apples are softened and liquid is syrupy, about 10 minutes. Add more water if needed in the cooking process. Take off heat and let cool completely. Cover and refrigerate for at least 1 hour. While apple mixture is cooking, prepare the quinoa. Cook 1 cup quinoa according to package directions. Once cooked, add 1 1/2 teaspoons cinnamon, mix well. Set aside to cool. Spoon 1/4 cup yogurt in bottom of 4 glasses, 1/4 cup quinoa, 1/4 cup cinnamon apple parfait. Repeat the layering and top with oat crumble. Serves 4.
